Today we are showing you five uses for pumpkin squash. It's October, the best time of year, and the best time for fresh pumpkin, so here are some ideas for things to do with this delicious autumn produce: storing pumpkins whole, pureeing pumpkin and freezing it, canning pumpkin chunks, using pumpkin in a roasted vegetables mix, and of course, making pumpkin cookies!

Grandma's Pumpkin Cookies Recipe:

Cream together:
1/2 cup shortening
1 cup dark brown sugar
1 cup pumpkin (fresh or canned)
1 egg

Add and mix:
2 cups flour
1 teaspoon baking powder
1 teaspoon sea salt
1 teaspoon baking soda
2-3 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon allspice
1/4 teaspoon ground ginger
1 tablespoon vanilla

Stir in (optional):
1 cup raisins
1/2 cup chopped pecans

Drop the dough (cookie size) onto a greased cookie sheet.

Bake at 375 degrees for 8-12 minutes.
